Salem Style Special Chicken Curry Recipe

Learn how to make tasty Salem style special chicken curry in easy and simple steps. This mouthwatering curry pairs well with South Indian savories like idli, dosa, poori, or North Indian breads like parata, rotis, and chappati. It can also be served with rice, biryani, pulav and ghee rice.

Chicken Curry Ingredients

  • 500 grams chicken (with bone)
  • 2 large onions- chopped or sliced
  • 5 tbsp oil
  • 2 tomatoes- medium chopped or sliced
  • ¼ tsp turmeric
  • ¾ tbsp ginger chopped
  • ¾ tbsp garlic chopped or ¾ tbsp garlic paste
  • Salt
  • Chopped coriander leaves for garnishing

Spices to Roast and make paste in a blender

Spices

• 2 tbsp coriander seeds
• 4 to 5 red chilies
• ¼ cup dried coconut
• 4 to 5 pepper corn
• 4 cloves
• ¼ nutmeg powder or a small piece of nutmeg
• 3 green cardamom
• 1 black cardamom
• 1-inch cinnamon stick
• 1 ½ poppy seeds
• 1 inch of fennel seeds
• 1 tbsp cumin seeds

Instructions to roast and make the spices paste

• Heat a pan on a low flame. Add one 1 tbsp of oil to the pan along with red chiles, coriander seeds, cinnamon, cloves, cardamoms, pepper and nutmeg, sauté until golden.
• Add coconut, cumin, poppy seeds, sauté until all the ingredients turn to golden
• Do not over roast. Set the sautéed ingredients aside.
• Cool the roasted spices and blend them with a little water to make paste.

Chicken Preparation

  • Wash the chicken with water, apply 1tsp turmeric powder and clean all the pieces. Set it aside to drain

Method of Preparation

  • Add oil to a pan and Sauté chopped onions until golden.
  • Add 2 tbsp ginger garlic Paste and sauté without burning until the raw smell goes off.
  • Fry on medium heat for 2 mins. Add the chopped tomatoes and fry on medium heat for 2 more mins.
  • Add a pinch of turmeric powder and mix it. Continue frying on medium heat for 3 mins till tomatoes get soft.
  • Now add the chicken pieces and fry on high heat for 2-3 mins till the chicken pieces are browned.
  • Add the spices paste, and salt as per your taste. Mix and fry on high heat for 5 mins. Continue to fry.
  • Medium heat for another 5 mins. – Now add 150 ml water and cook on low heat for around 20 mins till the chicken pieces are tender and oil separates.
