A Taste of Royalty: Sweet Saffron Rice Fit for Kings and Queens

Have you ever tasted the sweet saffron rice… I know most Bangaloreans think that the Kesari bath is made of Soji Rawa (semolina) But the Kesari bath is made of Jeera rice (sannakki). And this is a very famous dish in my hometown.

Ingredients:

  • Jeera rice (Sannakki)-250 gm
  • Saffron strands -3/4 gm
  • Sugar -375 gm
  • Pure ghee – 250 gm
  • Cloves -2
  • Milk -5-6 tsp
  • Lime juice 1/2 tsp
  • Salt-1tsb
  • Cashews -10
  • Raisins 25-30

Making of Kings and Queens Royal sweet

  • Firstly, you need to cook the rice with water and with 1 tsb of ghee. Cooking the rice in perfect way is more important here. and at the same time, rice should not be sticky. And spread the rice on plate for 5 minutes to cool.
  • You need to boil the milk and switch of the flame. and soak the saffron strands in the hot milk for 10 minutes.
  • You need make fine powder of cloves. Add the salt in lime juice and keep it aside. Keep ready cashews and raisins, if you want you can make small pieces of cashews.
  • Take a big pan or big kadai with heavy bottom. Add sugar and ghee with rice and mixing it well.
  • Once it starts boiling add that soaked saffron and milk, salt and lime juice.
  • Keep mixing the rice to avoid burning.
  • Once the Rice starts Absorbing the ghee, turn the flame to medium.
  • Add Powdered cloves and Raisins and Mix it well.
  • Within 5-10 minutes, you can see the mixture starts seeping the ghee. Turn of the flame and add the cashew.
  • Close the kadai with a lid or plate and allow to set for 10 minutes.

Kesari bath is ready to have now!
